Ingredients for 12-14 frixuelos

  • 500 ml whole milk.
  • 3 eggs.
  • 200 g wheat flour.
  • 30 g sugar.
  • A pinch of salt.
  • The zest of half a lemon, avoiding the white pith.
  • Mild-flavoured oil or a little butter for greasing the pan.
  • Sugar for sprinkling.

How to make Asturian frixuelos step by step

1. Beat the eggs

Place the eggs in a large bowl, add the sugar and a pinch of salt, and beat until well combined.

2. Add the milk

Add the whole milk and lemon zest. Mix again until smooth and evenly combined.

3. Add the flour

Gradually add the wheat flour while continuing to whisk. The batter should be thin, light and free of lumps. If necessary, pass it through a sieve.

4. Let the batter rest

Let the batter rest for about 15-20 minutes. Meanwhile, prepare a medium-sized non-stick frying pan.

5. Prepare the frying pan

Heat the pan over medium heat and grease it very lightly with a few drops of mild-flavoured oil or a little butter. There should be no excess fat.

6. Cook the frixuelos

Pour in a small amount of batter and quickly tilt the pan so that it spreads over the entire base in a thin layer. Cook until the edges begin to lift and the underside is lightly golden. Turn it over and cook briefly on the other side.

7. Stack and sprinkle with sugar

Place each frixuelo on a plate and sprinkle a little sugar over it before placing the next one on top. Continue until all the batter has been used. They can be served flat, folded or rolled.

Tips for making good Asturian frixuelos

The batter should be light. Traditional frixuelos are thin; batter that is too thick will make them heavy.

Avoid lumps. Add the flour gradually and whisk well. If any lumps remain, pass the batter through a sieve before cooking.

Use very little fat. Lightly greasing the pan is enough to prevent the frixuelos from sticking.

Do not pour in too much batter. Use only enough to cover the base of the pan with a thin layer.

Control the heat. Medium heat allows them to cook quickly without burning.

Serve them freshly made. They are particularly good while still warm, sprinkled with sugar.

The ideal frixuelo: it should be thin, flexible and tender, with small lightly golden areas. Traditionally, the frixuelos are stacked one on top of another with sugar sprinkled between them.

Frixuelos in Asturian cuisine

Frixuelos are one of Asturias’ traditional sweet dishes. They are made from a simple batter of eggs, milk and flour, cooked in a frying pan to produce very thin pieces.

Traditionally, they are served sprinkled with sugar and can be eaten flat, folded or rolled. They can also be served with different accompaniments, although the simplest version best showcases their traditional flavour.

They are especially popular during the Asturian Antroxu (Carnival), although they can be prepared and enjoyed throughout the year.
